    coffee, biscotti & HOMEBREW

I'm just sitting here, waiting for my water to boil. I'm brewing a coffee stout with a bit of chocolate malt. I took a few ingredients from a few different recipes I had found online. I needed a cheap/simple stout recipe, as funds are a bit low. This is the first time I've branched out, writing...

American Wheat Extract kit, with Dark German Munich?

I bought an American Wheat beer kit at my LHBS and its basically a huge bag of extract. I have a 1/2 lb of German Munich grain left over from a previous batch & I am thinking about adding it to the recipe. Any suggestions? Ha idea?

    Pumpkin Spice Flavored Sauce

I work at a coffee shop & have access to a pumpkin sauce & a pumpkin spice flavor. The sauce is a condensed milk base. The flavor is sugar/water based. I'm planning on bottling my pumpkin ale tonight & want to use a little bit of either or possibly both. Any feedback?

    Too much headspace in secondary?

I'm aware that you want as little headspace in your secondary as possible. As, any oxygen will just aerate the beer. There was about 3 inches of trub at the bottom, I sampled it (pumpkin ale) after transferring it to secondary - and it tasted strongly of alcohol. Hydrometer reading was...

Adding Vanilla during secondary or bottling?

I made a pumpkin ale that is currently fermenting. I have a brewer friend who suggested adding some vanilla during bottling. After a bit of research, it seems that's not uncommon. Especially if I am wanting it to be fairly sweet. Why would I not add it during secondary? Would the vanilla...

Your favorite dessert-style pumpkin ale recipe?

I've been looking online and I've found a few pumpkin ale recipes that look alright. I'm looking specifically for a sweeter beer with a bold pumpkin flavor and. A "Dessert Pumpkin Ale," if you will. This would be my second brew, so I'm quite good enough to experiment on my own. Any tips are...

Quick way to de-labelize used bottles?

Lordy, I'm not even going to make it to bottling day at the rate these labels are coming off. I've been soaking in warm water, peeling most off - then throwing through my dishwasher. My washer seems to be having trouble getting all the nasty glue off. Suggestions?

How necessary is a bottling bucket?

I'm getting prepared to bottle my first batch tomorrow, and I don't have a bottling bucket. It almost seems easier to just siphon the beer directly into the bottles. Do you brew-pros advise against that?

    Kegs vs bottles

I am currently fermenting my first brew, but wondering where I should go from there. Wait about 2 weeks, then bottle or keg, yeah? I've been stashing a ton of bottles, so I'm prepared on that front. But, I'm wondering if I should invest in a keg. What are the pro's and con's of both?
