    How long can you ferment

    Started fermenting an Irish dry stout six weeks ago. My wife passed awat and I had no time/desire to bottle it til now. The airlock has been maintained throughout. What should I expect from this batch. Is it wrth bothering with?

    steeping specialty grains

    I was wondering if it makes any difference if you put you grain in and then bring the temp up to about 155 or bring it up to 155 and then put them in the boil pot. I've been doing it the first way and want to see if I'm doing it wrong.

    bench capper

    I just got a bench capper and tried to use it yesterday. The thing will not crimp the caps. I used as much pressure as I dared but using more might break the bottle.
