I just started using this product and I have a question. The last time I brewed I cleaned and sanitized 2 carboys. I ended up only using 1 and I set the other to the side with an empty sanitized airlock. The queston is do I have to resanitize or should it be okay??

Okay so yesterday a poured a Lambic wort on a yeast cake and I luckily used a blow off hose because this time I needed it. I justed emptied the pitcher I'm letting it blow off into and I swear I saw yeast collecting at the bottom. Is this correct and if so can i harvest, wash, and store this yeast??
