    Gose not sour enough

Hi all, this isn't a lambic or a "wild" beer but hoping this is a good place to ask this one. I brewed a tangerine Gose last week, attempting to use acid malt for a bit of tartness instead of lacto. Just tasted it, and as I sort of expected, it's not nearly tart enough for my liking. The...

    Chocolate Porter recipe critique (ag)

Hi all, i'm looking for some input on this recipe I put together to brew on Saturday...i've never brewed an all grain porter before so i'm looking for any tips/changes that could make this better! Any input is appreciated. Mash 60 minutes 8 lbs 8.0 oz Pale Malt (2 Row) US (2.0 SRM) 1 lbs...

    Imperial stout...need help with timing

I've got an all grain Imperial Stout that has been in primary for the past 10 days, and i've got a couple questions. My 2 or 3 attempts at stouts in the past have been below average but this one tasted great after 7 days of fermenting so I want to make sure I don't screw it up. 1. I have some...

Do I need to add new yeast?

So...about a week ago I was planning to brew a pumpkin ale, and I picked up one of those smack packs from Wyeast. I smacked it, intending to brew that day or the next...but as it turned out, I didn't find time until about 4 days later. So the pack sat in the fridge, completely inflated for a...

    Is this recipe OK?

This is my 4th batch, and the first one that i'm not planning on using someone else's recipe for...it's nothing difficult, but I just want a couple more sets of eyes on it to see if i'm making any mistakes before I even start. thanks!! Unnamed IPA - 2.5 gallon batch 3 lbs extra light DME...

Nightmare brew day...will it be ruined?

So, yesterday was far and away the least successful of my 3 brew days so far. The goal was a 2.5 gallon imperial chocolate stout. My pot is only about 3 gallons, but it has been enough for my first two brews (although just barely, had a slight boil over the first time.) So anyway...I started...

    Batch #1 is delicious!

I tried my first brew last night, and i'm thrilled to say that it came out great! It's an IPA I made from a slightly tweaked Brewers Best extract kit. Very hoppy, the Falconers Flight hops are delicious and citrusy, it's pretty clear, nice head, smells great...overall it came out way better...

    Extreme Beer Fest - 2/4/12

Anyone going? I can't wait! This is my first year going to this one, and there are some very tasty sounding beers like this one from Jackie O's: Dark Apparition - Nuts -- Russian Imperial Stout, 10.5% (Brewed with hazelnut, almond, pecan, cashew, and coconut.) ...as well as some...

    MMA fans?

I'm brand new here and after doing a bit of searching it doesn't look like there are any active MMA threads going...any fans? I've been a huge fan of the sport since 2004 or so, and fight nights give me an excuse (not that I need one!) to open some good beers and relax. :fro: Favorite...
