This was a big hit at my sister's wedding this weekend. Definitely my best stout yet. I'm sure the 3 gallons on the oak chips will be even better.

I generally try to crash my yeast at some point so I really know how much I have. I assume 4 billion cells per ml of solidly crashed yeast, so 75 ml of solidly crashed yeast will provide the 300...

In the end this didn't end up better than Heady. It is possible the gravity is to blame, but I think it was my choice of hops for the hop bursting additions. The next time I do my 7th Hoppin' IPA I...

I posted in the other thread. Another thought would be that maybe calcium sulfate anhydrous doesn't provide nearly as much calcium sulfate on a gram per gram basis as gypsum, but from what I know...

Based on the Alchemist brew sheet I used 4 tsp of gypsum in my last HT clone. It was the best one yet, but now I'm seeing this thread and the numbers just don't add up. The hardness is spot on, but I...

Good work g-star. Based on what Heady Topper actually tests at (rather than what the brew sheet says they are adding) it would seem that a little less than 2 tsp gypsum per 5 gallons will get the...

Everyone sparges a bit differently so I don't know what to tell you there. I'm basing it off of a brew sheet from the Alchemist where they are hitting 750 mg/L hardness primarily through the use of...

Based on your water profile, I'd probably add about 2 tsp of gypsum per 5 gallons to the mash to get it more in line with the profile of Heady Topper. My hardness is much lower so I use 4 tsp. And if...

Added 2nd dry hop of 3 oz on 8-2. Had to sub Simcoe and CTZ for Apollo because the USPS sorting facility in Kearny, NJ is one of the worst in the country.
