If its extract I'd say no problem other than it may not be a bitter as it should. If its all grain you may end up with some DMS (cooked corn) flavor and the bitterness mentioned above.

How slow is "fairly slow"? It usually takes me no more that 1 min to dump grains in and stir the dough balls apart. I would say nano and micro brewers problems with slow mash in would not translate...
