I only use a 6" but notice it subdues boiling activity within the screen. It also clogs with cold break if I pump through it while chilling or hot break is forming.

I would switch out the crystal 70 malt in your recipe for all...

I don't know how old you are, but more time off work when a new arrival comes is a blessing. Enjoy. I gave up brewing for 10 years after the first was born. It will always be there to come back to.

In addition to skipping the cold crash I would look at making a kit recipe like Pliny from Northern Brewer....
