It's anecdotal, but when I got mine, I paid $35 for the keg, and $35 to cut the lid off and have...

Not at all. I usually hop my saisons to about 28 IBU, they funk up and get tart with no trouble whatsoever.

You might want to consider bringing that OG down into the 1.050-1.055 range. Otherwise you're going to be in the 8% abv range. While there's nothing necessarily wrong with that, a really high alcohol...

I went 100% wild with mine. Made a starter and left it out overnight, then built it up over a month or two and pitched it. I planned on it being a sour, at least I hope it is!

Nice. I got one like that going right now. 3 gallons. It looks horrific, but it smells good. I haven't tasted it yet. Waiting until the 6 month mark.

When I'm in the office...not so much. I could probably get away with a beer at lunch, but I rarely take a lunch anyway. Too busy.

When I'm travelling, however, it's a different story. Even when...

But even if the fruit isn't entirely turned into alcohol, it's still surrounded by it. Wouldn't that alcohol (even at wine levels) serve as a preservative, preventing the fruit from decaying?
