How does the mash pH affect the final taste and pH of the beer?

Just been listening to Jamil and Palmer's show about “why you wanna adjust your water” and they talk about pH in the beer (in the final product).

Can I ruin a 1.039 beer using 2 sachets of yeast instead of 1?

I am pretty sure I cant....but I'd like to know what you guys think?

I have US-05 yeast sachets from last year....and the mrmalty calculator says that even so, I only need 1.1 sachet of yeast....

There is one thing that crossed my mind today....

The EZ water calculator lists all the salt compounds we can use to adjust the water profile.

Epsom, CaCl2, Gypsum......but does it also...

I am about to mash. Looking at the EZ wter calculator makes me wonder what the actual mash will be....because it looks at the optimal pH at room temperature, but the actual temperature of the mash...

I have seen it somewhere....people were saying that instead of brewing a beer and experimenting with one water profile, I could simply add small amounts of salts to the finished beer and experiment...

I havent listened to the whole podcast yet, but I'd like a quick answer to this one.

Why do they suggest 5.2-5.3 pH?
My pH is in the range of 5.6-5.9. What difference will going down to 5.3 make...
