Hi All-
Have an AG Belgain Strong Dark ale I want to bottle Sunday. I am pitching rehydrated dry yeast (Safale US-05) in about 1 hr. Is 48 hours from repitch to bottle too short of a time? It seems like everything I have read says "3 days before bottling". The FG was very low when I transferred to the secondary (1.005), so finishing the fermentation seems to be of no concern. Any thoughts??

To improve carbonation. It was a big Trappist beer. Just what I read about making these.
