Planning a comeback brew, need recipe advice!

Well, after about a year or so NOT homebrewing (Not at my volition, I have been moving around A LOT since my orders were up), I am finally going to get some time to brew again and I need help on deciding what I want to brew. I was thinking something wintery like a Snow Cap clone (one of my favorite beers of all time btw), but also want to do a witbier like Hoegaarden as well (Hoegaarden also being my one of my favorite brews ever and the brew that got me into homebrewing believe it or not). So yea, 2 brew ideas!

I have an entire EXTRACT homebrew kit, with the addition of another secondary (But I think I need to get another airlock for it, can't remember off hand), so I would like to do 2 batches with steeping grains. Anyone have any suggestions?
 
I'm a fairly new brewer but here is a recipe I just used for a witbier.

5 gallon batch, 2.5 gallon boil

4 lbs Alexnders Pale LME
3 lbs Wheat DME
6 oz flaked wheat (steeped)
6 oz Dingemans Aromatic Malt (steeped)

1 oz Williamette at 60
.5 oz Williamette at 15
.5 Saaz at 2

.5 oz bitter orange peel at 15
.5 oz crushed corriander at 15

.5 oz bitter orange peel at 2
.5 oz crushed corriander at 2

WLP400 belgian wit yeast (I didn't use a starter)

Also added a Servomyces capsule at 15

OG should be around 1.050 to 1.055
FG should be 1.008 to 1.012
ABV 5.0 to 5.2
IBU 24

Just bottled it yesterday and the hydrometer sample was very tasty. In primary fermenter for 3 weeks @ 64 F
 
That sir, sounds like it will be a nice beer! Just curious, why didn't you use any oats for this one?
 
From my understanding, maybe truly authentic witbiers use oats, Hoegaarden does not for whatever reason. Decided to try to make a clone
