Hallo,
A Cider story 50+ years in the making.
In the late 1950's somewhere in Southern Germany.
I was a baby when my father came home one day (yeah, like I would really remember) with two brand spanking new 100 liter plastic cider barrels.
My father had got to know a farmer who also owned an orchard and he and his family had been making hard cider (Most) for decades.
The farmer taught my father the big secret of making hard cider.
And every year in the fall I got to watch my dad make it also.
He filled the apple juice into one of the 100 liter barrels and added a whole lot of sugar to it. 20 lbs of it.
Oh, and I almost forgot, Apfelschnaps into the airlock to keep the air out.
About six weeks later (after all that bubbling stops) it gets transferred into the second barrel.
And I still make it the same way nowadays!
Well, no, come to think of it, I am not. I do not have a deep cellar where the temp is a steady 60F year round and ghosts seem to lurk behind every wall.
