I just started primary fermentation on an Irish Red Ale last night (NB's starter kit Irish Red), and I was thinking that some Irish whiskey might complement it well. Any thoughts on how best to accomplish it?
Possibilities I've considered include soaking some oak chips (fermentation's already started, so it might have to sit in secondary for a couple of days before I've had time to get the chips and soak them) or simply adding some whiskey straight to the bottling bucket.
Would one work better than the other?
