Just opened my first brew ever over the weekend. I didn't wait the whole three weeks, but I now know that after those 3 weeks are up this brew will be great. RDWHAHB, indeed! Good carbonation, a little green but I expected that after only waiting eight days to open it. Got a little chill haze also after being in the fridge, so I was mindful to shorten the time for the chill break when I made my English Nut Brown Bitters yesterday afternoon...:rockin:
Everybody who's just starting: Make sure you read the threads where people thought they messed up and the beer ended up just fine. I think a lot of paranoia gets generated by the stressing of sanitation (which is justifiably stressed quite a bit), but beer wort is actually more resilient than we're initially led to believe. Just go for it!!!
