Right now I am in a dilemma. My ol' lady will not let me hook this up to my fridge unless she can still use the freezer for overflow Costco frozen goods. Is there a way for me to wire it into the current set up bypassing the temperature control that is pre-existing in the fridge?

I might be able to convince her to let me take over the fridge, but I just realized that I bought the 220 V controller. Is there a cheap fix to that problem, or am I out of luck?

Most fridge/freezers, except maybe the higher-end models, have one refrigeration curcuit which feeds both the fridge and freezer. I don't think there's a way to do what you're wanting to do.
