Well, this beer is coming along nicely.

SG approx 1.116
FG approx 1.015

Moving to secondary today. I may add some oak chips that I'll soak in laphroiag.
 
Beer is sitting in Tertiary now for the last few months. It looks delicious. I think I'll wind up racking to keg in March and naturally carb it so I can store it long term in the keg and bottle off it when necessary.

I'm missing some of the oakiness so I'll probably wind up adding more oak as well.
 
You definitely won't get anything from just .75oz of nibs, if the brewing with chocolate thread is to be believed. Recommendations there start at 5 oz up to a couple pounds.


Why are you aging soo long? Did you get lots of fusels or other off flavors in your samples?
 
Beer is sitting at 14% ABV...it'll take awhile to mellow out to where I want it.
