I usually leave my brews in the fermenter for at least 3 weeks, but seeing as im going out of town i want to bottle my hefe before i go. So long as i've hit my FG is there anything wrong with bottling after two weeks? Its my first hefe but i've heard there one of the fastest beers to brew.... gracias!

I usually let my hefes sit in a secondary for 2 weeks, a week and a half if I'm in a real rush. Like any other beer, it will get better with time but your correct in thinking that bottling a hefe early won't hurt too much. I don't think bottling the hefe early will hurt you so go ahead and try it :) so long as you've hit your FG.
