So I have recently had a few beers that had this slight apricot flavor to them and I dont think its from apricots.

Specifically Moat Czech Pilsner and Otter Creek Copper Ale, and more so in the pilsner.

Can this type of flavor be attributed to a certain brewing grain or perhaps a hop characteristic, yeast maybe?

Kent Golding hops (and maybe others) can have a slight apricot essence in their profile and certain UK ale yeasts could also have a touch of apricot from ester production. While either of those might show up in a copper ale it is not something I would ever expect to find in a Czech Pilsner. Does that Pils have a fresh date or production date on the label?
