6.6# Wheat extract (liquid)
1oz Perle (bittering) - 60 minute boil.
1/2oz @ 50 min hallertaur (flavor/bitter)
1/2oz @ 59 min hallertaur (aroma)
Safbrew T-58 yeast pitched @ 78F into a 6gal glass carboy.
OG 1.044
FG 1.011
Primed w/ 5oz corn sugar in 16oz H2O.
Mighty tastey, though next time, I might use some DME rather than LME to lighten the color a bit.

A speciality yeast selected for its estery somewhat peppery and spicy flavour development.
I might try a different yeast as well, but I haven't really investigated yet, early on, the beer was a bit too spicy, though that's mellowing out.
4 weeks in the bottle and it's become a very fine wheat.... especially for my reintroduction to brewing after a 10+ year hiatus.
