I recently brewed a Red Ale, I had really good effiency and it came in at 8.5% when finished, wow, I was not expecting that. How long do you suggest I wait for it to bottle condition?

I'd say 3 months plus.

The only way to tell is wait as long as you think or can and then test a bottle every couple of weeks and see when you are happy with it.

I had to check to make sure I didn't write this. I'm about ready to bottle a 1.079 Red Ale that was supposed to be 1.065. Ofcourse I mashed high which resulted in a full bodied beer that finished at 1.023 for "only' 7.3% ABV :drunk: . I give this some time before sampling :) (5 weeks in the fermenters so far).
