Today I was invited to present my Barleywine to a local gourmet market owner. After thoroughly experiencing my creation, he pulled a 1983 Old Foghorn Barleywine from his cellared collection. Six of us to 6.4 ozs. of aged nectar! We swirled, we sniffed, and we sampled. What an exquisite bouquet! Aged alcohol, burnt caramel and molasses followed by forest, wet moss and a hint of barnyard. It was completely still, with an almost oily mouthfeel yet slippery and dry finish. Flavors of burnt caramel and molasses, prune, must and sea salt, delectably balanced. What a treat!

That is awesome. I would think there would be quite a bit of oxidation with a 30 year old bottle, but I've heard jamil say that tiny amounts of oxidation help add sherry notes to the overall flavor. Cool stuff, cheers!
