    American Light Pale Ale

With the super high alpha acid content of Summit, I think the hop schedule should be fine. What benefit comes with adding the extract at flameout instead of the beginning of the boil?

    American Light Pale Ale

I just started with the idea of brewing a pale and decided to lighten it up a bit for a session ale and more appeal to casual beer drinkers. 6lbs Pilsner LME .5lb Crystal 20L - steeped 25 min. @ 152*F 1lb Rice Syrup Solids .5 oz. Summit - 20 min. .5 oz. Cascade - 20 min. .5 oz. Summit 5...

    Critique please: Pepper-Lime blonde ale

sounds good, but i'm not sure what effect the peppercorn will have. i've done a lime ale before and a jalepeno ale but not one recipe with both. i would think that fresh peppers (in a very small amount) might compliment the lime better than the peppercorn would. but what's the fun if you...

    Getting good hop aroma?

keep the hops loose in the wort so that there is more surface area exposed. also, i like to do a 5 minute addition, some at flameout, and then dry-hopped as well. that should do the trick unless you're dealing with old or poor quality hops.

    chocolate coffee stout

i'd say increase the roasted malt to half a pound, add lactose, and change the coffee addition. either add whole beans as you would dry hop, which will impart more aroma, or freshly brewed coffee at bottling, but DO NOT boil the coffee. if it is boiled it will have a burnt flavor. the cold...

First time generating a recipe from scratch

To each his own, but imo that much cascades at the end of the boil sounds fantastic. That's where i want the hops the most!

    Hard Rasberry lemonade?!

try adding lactose or xylitol to sweeten it a bit and it won't be so dry. also check out this thread as it should help you tremendously! http://community.mrbeer.com/index.php?option=com_kunena&Itemid=124&func=view&catid=20&id=86954

    Pepper Beer help

I just did a jalapeno cerveza, but it seems like jalapenos aren't quite what you're looking for. Regardless, in a 2.13 gallon batch I used 6 coursely chopped jalapenos soaking in the beer for two weeks in the fermenter. The spice and flavor is fairly potent, but it is how I wanted it to be...
