    So here is a question for you veterans: My brew uses Irish Ale Wyeast which I've read is notorious for working quickly. How soon after fermentation begins would you recommend I take a gravity reading?

    Appreciate the feedback and I'll certainly keep everybody posted. Again, I was just going from the numbers that jumped in my head, but from the notes I was actually right in the 158 zone for the mashing. I hope it'll turn out well, was certainly enjoyable--so much so that my wife is insisting...
