    Yes. Pretty much, even if only for 2 hrs. Running a vertical cabinet pellet smoker, usually has quite a bit in it.

    I use a variant of this. Smoke at 225f until 150-155IT. Then wrap, put in 350f oven to power through stall, then unwrap, back into 225f smoker to "rebark" until 202IT.     50 lbs, went into smoker to dry Jan 18, smoked Jan 20, 21, 22. Rested in smoker 2 more days. Sliced and vac packed Jan 25. Smoker never above 38f.

    Brunwater trouble

    I'll have to try it and compare to brunwater. Always looking for easier/efficient, though the two aren't mutually exclusive.
