I think you'd run the risk of damaging your stainless. I believe that prolonged exposure to salt water below boiling will cause most types of stainless to pit.
I could be mistaken but it's something you might want to look into.
Just an update: The gasket made from silicone tubing worked great. It was extremely snug and a little tough to squeeze in but it's water-tight, flexible, and definitely not going anywhere.

There are several yeast banks that carry a Fantome sacc strain these days which is great-it does make a difference. However, if this is a pure strain and not a blend of sacc, brett, and bacteria then you're not going to end up with a product that resembles the best...
