try xylitol instead of sugar as it has fewer calories/gram and will help drop the calorie count per bottle or serving
fyi yest doesnt feed on xylitol well so a ratio of 1:1 xylitol:sucrose should help

ive made too much root beer to count (or digest)
here are my suggestions:
1. root beer is best made with a blend of sugars but to understand this make batches with a single sugar FIRST, then use the same recipe with blending to the same amount of sugar...
i make glogg throughout the holidays and the drinks are related but not quite the same
you can buy the commercial version of julmust at ikea usually in their cafeteria/food store
you can also get it at cost plus world market

first guess would be sanitation. how did you sanitize and sterilize the bottles?
second guess is seals. is there an airtight seal? did the bottlecaps get fouled in some way?
third guess is yeast. how old is it? how was it stored? was it hydrated properly before using?
i doubt its the extract...

shoot (pun) id even call it blunderbuss brewery and use something like this to build from...
you dont have to hydrate, it depends on the yeast you are using. if its dehyrated yeast you should hydrate so that the cell walls of the yeast can function properly. if its a liquid yeast this is less important. it also makes fermentation go a bit faster. i use fleishman's regular bakers yeast...
