    Finished brewing this yesterday. I had all my ingredients into BeerSmith the same as the recipe but it was saying I'd be getting 1.075....I ended up with .70 anyways so it all worked out. HOWEVER, For some reason with the same hop schedule...Beersmith was calling for 230IBU...wtf?!

    My original gravity with this one was 1.072....1.5 packets of S-04 yeast took it down to 1.007. 8.6%!!!!

    Just brewed this on Thursday. 3 days of fermentation at 68 degrees Fahrenheit and we hit 5.7%. We used Nottingham yeast however...is this yeast supposed to work this quick? The krausen has already completely dropped! When I use S-04 usually the top of the carboy is messy for about a week!

    I used the Belle saison yeast as I like using dry yeast for convenience. Worked great! Could have probably let it ferment a bit hotter but overall a great aroma with some nice esters. Very approachable saison.

    I totally messed up the hop schedule/ammounts on this one...but it turned out fantastic! 2 weeks after bottling and the beer was great. Going to try another one next week, but so far so good! 6.9%, 55 IBU's.

    Autumn Seasonal Beer Punkin' Ale

    Does anyone know if this beer mellows quite a bit? Its pretty harsh and almost sulphitey tasting a week out. Fermentation is done. I'm not sure if maybe my water additions were off, or if maybe having too many grains in the boil kettle due to stuck sparge may have caused some off flavours. Anyone?

    So I ended up with a stuck sparge water disaster. Was not even able to get all of the sparge water out. Had to use some top up water and ended up with 4 gallons at 1.070. Other than that, beer smells pretty good. Pitched about 1.4 packets of S-05. We shall see what time brings. We ended up...

    Brewing this today...It says 2 packs of US-05, but Mr. Malty says I`ll need about 1.2 packs of dry yeast. Should I use .2 of a pack and save the yeast for another brew? Also, my brewsmith seems to be getting an OG of 1.070 instead of 1.065. Same efficiency and ingredients. Any ideas?

    Pitching US-05 used in a cider into beer

    I ended up dumping the yeast cake although my cider was only 5.5%. Therefore I don't think the yeast would have been that stressed. Any other reasons not to go from cider to beer with the same yeast if alcohol is low?

    Hey all I recently made a simple cider using US-05. I'M brewing a pumpkin beer on sunday. Can I wash the yeast and use it in my beer? I've read some posts saying not to go from simple to complex sugars but haven't seen anything official on it.

    My current batch of this is sitting in secondary and I used Belle Saison. It fermented very fast. I prefer dry yeasts at the current time. No need for starters. Just buy more or less yeast and it's cheaper.

    I should reiterate. I was thinking of blending the puree with the water and heating it with the strike water so i dont lose temperature. I think the consistency would prevent it from causing a stuck sparge no?

    So I'm going to be brewing this soon, no rice hulls. I was thinking of blending the pumpkin very finely with some water and adding it to the mash. Do you think this will help?
