My last IPA was basically the same thing except I dry hopped with half galaxy half simcoe. It turned out fantastic.

I've used simcoe with galaxy and had great results.

I make a pale ale with 1/2 oz citra and 1/4 oz Columbus at 15 mins and 5 mins and dry hop with 1 oz citra and 1/2 oz Columbus. It tastes awesome and I think the added earthy/dankness from the Columbus really helps the citra .

15 min: 1/2 oz each of simcoe/galaxy 10 min: 1/2 oz each of simcoe/galaxy 5 min: 1/2 oz each of simcoe/galaxy flameout: 1/2 oz each of simcoe/galaxy dry hop: 1 oz each of columbus/citra

I made an ipa with equal parts galaxy and simcoe and it tastes great.

Look up northern brewers dead ringer kit.

I like to throw a little Victory malt in mine.

I haven't nailed down my efficiency yet so I'm thinking around 1.073-1.078. I had also thought of using 0.8 oz of magnum at 60 min to decrease the ibus a little also.

Thanks for the help. Can I boil wort with the false bottom or would it just be for mashing?

I just got a Blichmann 10 gallon pot and hope to start doing all grain BIAB batches soon. I noticed that the thermometer sticks out in the pot. Will this be a problem puncturing the bag or should it be no problem?
