I won't tell you not to, because that's what I do! I also have a bazooka tube in the bottom, the bag is another filter and cleanup is way easier. Plus you can double crush your grains if you'd like. Oh and I use one of those 24" whisks, no dough balls or stuck mashes!
I would just pitch your yeast and let it go. That's what I've done several times without issue. You could break a Campden tablet (Potassium Metabisulfite) up and throw that in if you're worried.
I did a NEIPA where I used Bravo for Bittering, now granted I used a few other hops, but I got the orange out of that. Once I tasted it, I decided to dry hop with another ounce of Bravo in the keg.
I brewed a Saison with the Viking Pils that should be pretty light, but it looks like an Amber. I was scratching my head trying to figure out why. Looks like I'm not the only one.
