    How do you "wash the yeast cake?" Thanks for the replies, guiz! I suppose another option is to move to a secondary carboy, and do the dry hopping in that, then bottle in 5 days.

    "cold crash after 5 days, and not worry about it. It won't taint your next batch." Are the hops that remain in the yeast cake "played out" or exhausted of any ability to impart qualities to the next batch or wort placed on top? I did not think that would be the case.

    I typically schedule my brews so that I recycle the yeast cake with a similar or darker beer for at least 2-3 batches. I start with a dry yeast packet. So I prefer to keep as much of the hops out of that cake by using muslin hop bags. ????? How do I insert the hop pellets into a carboy...

    my 15' pool varies 10 F during the day. Very little can be done passively (cheaply). Not critical though, mate.

    It is VERY POSSIBLE! I have made 115 gallons of extract kits. SG is below advertised EVERY TIME! Buy the appropriate DME and add until SG is where you want it.

    I should have said, stir or mix rather than aerate. My goal was not to introduce air, and I think I was successful. I went ahead and bottled it, only spending $ for the caps and the time. Most of my beers don't taste good at this point, but come out great later. Thanks for the advice...

    I thought the LME was what you should leave until the last 15 mins, not the DME. I did that. Then I started another wheat extract kit, and other than the hops, there is only the two cans of LME (+ the brew vint Alc boost I add). Now what am I boiling and why? Only thing in the pot for...

    Recipe True Brew Extract Kit 2 cans unhopped Wheat LME 1.5 lb UK Windsor yeast 1 Brew vint Add pack brewed 10.19 FG 11.3 = 1.023 added 2T amylase, no agitation 11.7 FG = 1.022, aerated with drill I don't know what to do, but I intend to rehydrate my dry yeasts from now on.

    Ok, now I am totally at a loss. I added 2T of Amylase extract. It self-churned and I did not stir it so I would not introduce O2. It has been 5 days or more, and FG remains at the same reading of 1.022. I don't know why this had no effect.

    You just described how I use a brew vint to get a 1.055 - 1.060 SG and then when my FG won't go below 1.020 I still get 5% beer. If it goes below 1.020, then I get super awesome ignore post-election terror daydream beer.:drunk: Carry on.
