I am new to all grain brewing and I'm struggling with how much wort to collect. I will be doing an AleSmith IPA clone tomorrow. How do I figure a rough estimate of how much wort to collect? (knowing that there are many variables) 5 gallon, 90 min boil OG= 1.073 FG= 1.014 ABV= 7.6%

Question I just bottled my 2nd batch and let it sit for a week before putting them all in the fridge. How will the fridge affect my beers if I leave them in there for a few more weeks? After reading this it sounds like I should not have put them in the fridge for a few weeks.

Thanks for the recommendations, I like the brew brother kit, that seems like a good kit for the price. Midwest Supplies has a similar kit although it does not have an auto siphon which sounds like a good thing to have.
