Wee Heavy Smoky Roasty Scotch Ale

Sorry for the really late reply, but I typically keep this (and all beers) in the primary carboy for 3 weeks before kegging. I then keg and force carb for at least a week and usually two. For this particular beer, longer is better as it mellows and melds with age. That said, the longest...

    Thoughts on Hop Devil Clone?

Finally got some Hop Devil to do a comparison this weekend. This recipe is very similar, though less hoppy. Flavor, malt character are near spot on. Slightly more bittering hops and a touch more aroma and it'd be almost the same :mug:

    Thoughts on Hop Devil Clone?

BTW, I ended up using S-05 yeast

    Thoughts on Hop Devil Clone?

Finally got around to brewing this and kegged it tonight. Boy is it tasty! I tried dry hopping a couple of ounces of leaf and pellet hops for 7 days. When I brew again, I would leave them a little longer to more hop aroma. I might also add a little more hops to the boil. Final gravity...

    JW Dundee's

High falls brewery (local to Rochester) was just sold. So Genesee / High Falls / whatever the new name will be, may start to taste different in a year or so if the new owners change things up.

    Interview skills

I disagree. I'd prefer to have a candidate that can reflect on themselves, rather than someone who thinks that they know everything. If you can demonstrate the aptitude to learn, I'd rather know that. Rarely will you have a candidate that fits the job criteria 100%. Sure, core skills are...

60 qt igloo ice cube MLT

I currently use this cooler and a cpvc manifold. My version of the cooler didn't have a spigot, so I had to drill the hole myself. Works fine, though I do have the angled manifold that you mentioned. All said, i'm still able to get 80% efficiency with my setup

    Interview skills

I actually ask a similar question, "What would you consider an area or trait that you'd like to improve upon". What I'm looking for with this question is retrospective. Everyone has *something* that they can improve on, I'd like the candidate to do some thinking about areas for growth and be...

Thanks for the feedback. This is probably going to be my next brew; just ordered the hops today!

    Thoughts on Hop Devil Clone?

Hope this isn't too hard to read, it's a copy from Beersmith. Does this look like it'd make a beer similar to Hop Devil? Malts look about right to me, but I'm not sure on the hops.. Ingredients Amount Item Type % or IBU 7.39 lb Pale Malt (2 Row) US (2.0 SRM) Grain 64.15 % 2.17 lb...

    64 Calories

About the close I can get without spending more time than I want to in Beersmith is by going from 1.017 to 1.001, which nets 70 calories per pint --53 of those coming from alcohol. May as well drink water, this is a 2.1 abv beer. :mug:

    64 Calories

Calories in beer are largely from the alcohol. Less alcohol will typically yield less calories. There's other factors like un-fermented sugars, but alcohol is a big caloric player
