Without a doubt, controlling pH with a good pH meter, a little lactic acid and sensible calcium additions. Sanitation. It's all in the recipe from that point on.

The answer to your question is some variation of historical corn adjunct beers and ales. I have been brewing steadily for 40 years. I have to have something with a good amount of corn in it. I used to steàdily brew a CAP until about 25 years ago. Then I started brewing cream ales. Same recipe...

FInally got my order from Northern Brewer.

Makes me seriously consider switching to Crystal hops. As long as American and British hops retain their aa%, I'll be ok. But then there's Tettnang, another one of my favorites.
Recently picked up some Hallertauer Mittelfruh with a 1.8% alpha acid content. I'll be using it for flavor & aroma additions to llimit the amount of vegetable matter in the spider. However, I've never come across such a low AA percentage. Anyone know of any issues with numbers this low?
