I dry hopped a Stone Levitation clone with 1.5 oz of Amarillo for 17 days and it picked up a veggie taste. It was bottled 3.5 weeks ago and the taste has calmed somewhat but it is still there. I think 7-10 days is ideal.
I agree with toning down the crystal.
I would wouldn't use the partial simcoe and Amarillo in the 60 min. I would use more warrior to get you to your desired bitterness and save the simcoe and Amarillo for flavor/aroma additions.
