    Saison using wine yeast

I wasn't really a fan of saison beer until I tasted the Brasserie Charlevoix Dominus Vobiscum Saison. What I really liked in this beer is it's a refreshing beer with fruit aroma and flavor and without any spice. So this weekend, I read the book Farmhouses Ales (...) by Phil Markowski...

    Air lock

I had that problem once ... the airlock wasn't tightly seated in the hole so a small spacing between the rubber plug and the cover was leaking CO2. I should add that the hole was hand made with an utility knife so the circle wasn't perfect ... :drunk: I prefer the S-type ailock over the...

    Sulfite or not to sulfite

So ... I didn't wanted to use sulfite because of the headache/alergic reaction. Well, I eat dried apricot, strawberry, drink over infused tea... so my weird reaction to red wine is not due to sulfite/wine. Interesting I think that this article annihilated my last reluctance against using...

    Sulfite or not to sulfite

I have a cider aging that I don't know what to do with ... backsweeten or sparkling. I think I'll backsweet a glass and carbonate a small bottle to decide. If I am sweetening it, should I cold crash the cider before or after adding sulfite/sorbate?

    Sulfite or not to sulfite

According to https://www.homebrewtalk.com/f25/sulfite-vs-sorbate-378502/ when sulfiting, you should also add potassium sorbate. When potassium sorbate is used with potassium metabisulfite, it prevent refermentation.

    Gravity Transfer without tubing

I forgot to buy a tubing for transfering the sanitizer from my new conical fermentor to a storage carboy. I had to stay beside the carboy to push it toward the fermentor so the stream stay centred with the funel. That was funny but I bougth some tubing for tranfering the beer.

    Sulfite or not to sulfite

Should I use sulfite to stabilize my cider / mead? Do you use sulfite? I think that sulfite could be use when backsweeting. I haven't found any warning against sulfiting beside if someone is allergic. I found those article about sulfite...

A cautionary tale, learn from my mistakes!

I have my first cider aging in secondary. When transferring from primary to secondary (3-4 week old), the cider tasted like a watery apple juice. From what you are saying, it's ok that the cider taste watery and that phase will fade?

    Backsweeting Cider

During the month of october, I started a cider. When racking to secondary for aging, I tasted my cider and it tasted like apple (good!) but watery (bad). I used low acidity freshly pressed apple juice. The juice wasn't for cider making but drinking. I think it was made with Mcintosh...

Bottling mead - Caps vs Corking mead - either method superior?

I use cork for the aesthetic look of the cork. Also because I got my corker at a special discount rate (20$). Also I like the look of the bottle with the heat shrink. I don't think it can be done with crown cap. For carbonated mead, I'll use american sparkling wine bottle. These bottle...

    Thoughts on braggots?

But if you dry-hop before drinking. Using, say, a french press you infuse the hop in the braggot then filter out the hop and serve the braggot right away.
