    What is the big deal about Belgian Beers?

    For me, Belgian styles were the gateway. Before the American craft brewing explosion, I could basically buy BMC, Sam Adams and Corona. Sometimes you just don't like the same things other people do. I'm not a huge Dogfish Head fan, although I admire what they are doing and how they are doing it.

    I personally haven't seen the gunk that boiling water/PBW can't remove from a corny. I would pour boiling water (using an aluminum pitcher...be safe) in, mix some PBW and let it sit.

    Then it sounds like a winner. You will find claims of 70 - 75% attenuation for s-04, so 69% is right there. It sounds like your process was good. You can always take hydrometer readings to make sure it's finished.

    I would have just had my wife/significant other order the gear an hour later. I do think it's strange that they wouldn't ship QD's to an address in Virginia. We aren't talking centrifuges or encryption technology.

    I haven't criticized anything in this thread. I've acknowledged that some recipes can be turned around quickly. You haven't acknowledged that it is ever appropriate to age a beer, unless of course the brewer is an inexperienced noob who obviously introduced off flavors through poor technique.
