    I see, OK. I will try starting out with dry yeast then. I like using the Wyeast smack packs with beer because of the simplicity of starting the yeast up, no need for proofing. But it sounds like the dry yeasts make more sense for mead. Hmmm, I do have an extra pack of 1056 in my fridge...
