Some saisons like to ferment at those temps. I just finished a wheat ale that fermented at 79 for a week and it tastes pretty darn good! The saisons are a little more complex and traditional, and there are many Belgian variants if you're particularly interested in Belgians. I'm experimenting...
I'm not sure if someone has already posted this in the ~200 preceding pages, but if anyone who does small batches (1-gallon) wants to wash their yeast, I used a quart jar and two pint jars and the measures came out correct for my 1-gallon fermenter.
I did not take any gravity readings (no hydrometer yet), but after a week of primary I bottled it today. There was a very small bit left in the fermenter after I got 8 bottles filled, and it tasted and smelled just fine. I think it'll be okay. I'm washing the yeast now because if they can handle...
