    Southern Sweet Cider

I have a batch of this in progress now - upped the recipe to 5 gallons. My OG was only 1.060 (close enough, i think) and I used wyeast cider yeast. After about 5 days in a warm space the cider is at 1.025. Hopefully it continues to drop.

    Cider recipe repository?

I'm starting a 2nd 5 gallon batch of cider and wanted to try a different recipe than I got from a freind. Any sugustions? The sticky at the top has lots of discusison but recipes are spead all over the place. Anyone know of a good central place to look at simple recipies?

Cant get cider to start fermentation

No luck w/ aerating the cider - I guess I'm going to have to toss it. How many campden tables do people recommend for 5 gallons?

Cant get cider to start fermentation

I probably did over do the campden tablets recommended is 1 to 1 - its a friends recipe and he likes to over do it for some reason. I dont have access to the apples anymore. Can I salvage this set somehow?

Cant get cider to start fermentation

First pitch was about a week ago today. 2nd pitch was 24 hrs ago. Agreed it might have been too cold on the first pitch but the 2nd pitch it should have been plenty warm.

Cant get cider to start fermentation

Hello, I Cant get my cider to start fermenting. My cider is home pressed by Mennonite family made up of 4 types of apples and as far as I know is preservative free. One week ago I put in 10 campden tablets in 5 gallons in a sealed food bucket. I waited 24 hrs then boiled a few quarts of...

First cider, 24 hrs out and no bubbles

Just wanted to thank everyone and let them know I've finished racking and bottled last night. Had trouble getting clean bottles. I used amonia and water to remove the labels but ended up with a film on the bottles. I washed the bottles in a dishwasher, still had the film. I used a bottle...

First cider, 24 hrs out and no bubbles

It was very fizzy inside again - maybe I didn't have the lid on quite right? I could still smell it with the lid on so maybe the gas was escaping another way. Anyway I've given it a good stir.

First cider, 24 hrs out and no bubbles

I'm probably worrying too much again but its been 12 hours and the bubbling hasn't re-started since I checked the gravity - I wonder why?

First cider, 24 hrs out and no bubbles

I re-pitched about a week ago with a different brand of yeast and within days the fermentation started. Today - about a solid week of bubbling I sanitized the hydrometer with soap and hot water (I don't have true sanitizer). The SG at start was in the low 80's today its in the low 20's. I had...

First cider, 24 hrs out and no bubbles

I had 2 crushed up in each gallon. FYI I'm about 80 hrs into the brew and no bubbles. I'm highly considering getting new yeast and trying again. I figure I either got lied to and sold cider w/ preservative or the yeast was no good.

First cider, 24 hrs out and no bubbles

Thanks for the quick response! I'll try to relax. I'm reading all the other cider threads and I see the consistent thing that everyone says is 'relax', 'wait' and 'just forget about it for a few weeks'. It's a challenge! I just wanted to confirm that in principle I did everything right. Thanks!

First cider, 24 hrs out and no bubbles

Hello - I'm doing my first hard cider. I followed a recipe given by a friend who's done this before. I used 5 gallons of local cider w/ no preservative and not pasteurized with a campden tablet or 2 in it to start for 48 hrs. I warmed about a half gallon and added the following: 5 cups...
