    This is my first mead ever, and from my research it looks like mead takes a while to be drinkable, so I was going to go with a 3 month schedule on this one since the ABV is only around 9%. I was planning on trying it sometime in December, and will post back here when I do!!

    I see it's been a while for a post here but figured I'd contribute....pitched some rehydrated Notty yesterday into a 1.053 American IPA, and it was bubbling within 6 hours and went friggin crazy at about 12.....it's been 24 hours and it is only bubbling about 2-3 times a minute now...wow...first...

    this stuff is good!!! the work peeps liked it as well!! think I'm gonna have to make a 5 of it!! You wouldn't even know you were drinking alcohol, and just 1 bottle at 7.2% had me feelin' pretty good!!! :)

    as it ferments out the yeast "eat" the sugar and therefore when it's done fermenting it won't be anywhere as sweet as it is now. Just give it some time. I have a 5 gallon batch going right now that will be in the primary fermenter for about a month before I transfer to the secondary. And you're...

    Adding more juice wont help with the sweetness. How long has it been fermenting, it shouldnt be done yet at 1060. If it has stopped you could always pitch more yeast??

    Hey guys.....first post!! I am currently making a 1 gallon of this but upped the brown sugar to 5 oz & lactose to 4 1/2 oz. Fermented out and stabilizing right now!! Will let you know how it is when I keg in about a week!! My OG was 1.073
