I'm working on my first batch with this yeast. I didn't have any lag problems... in the fermenter and things were starting to rock maybe 5-6 hours later. We've had a bit of a cool spell this week, and the temps where the fermenter is dropped to low 50's ambient before I stabilized (the JC is...
Slightly old thread, but just want to point out that today, on my 66th brew, I had this happen for the first time. I usually use 3 gallon better bottles, but I had a few friends over for Teach a Friend to Brew Day, and thus I used the 5 gallon bucket that I rarely use. All went well...
FYI, here's where I started my countertop mini-mashing career, which moved on to full BIAB mashes soon after. It's a good article, though I do everything in the pot instead of in the cooler now...
BYO Countertop Partial Mashing article
Was at the Yazoo brewery tonight, though I didn't have Gerst tonight. Still one of my favorites...
Question... are you planning to countertop mini-mash this, or steep it? IMHO, there's really not much difference... Just get your water to 160 in a pot on the stovetop (or on a turkey fryer)...
Here's my dos centavos. YMMV, and others may offer contrary opinion...
It depends if you are trying to replicate the beer exactly, or just get a similar vibe. My understanding of Briess amber is that it includes Pale, Cara 60L, and Munich malts. I'm sure other brands are of a similar nature...
Old thread, but here's what I brewed after discussing with the Yazoo folks. Really happy with the result.

Hap and Harry's... When I'm in a pale lager mood, I can't get enough of this stuff... all-grain (Pilsner, Vienna, and Biscuit), 5.4%, Perle for bittering, Saaz for aroma, 14 IBU. May make a run at this when I do my next lager...
Very nice, Yazoo...
Wlp002 is what worked best for me here, so 1968 seems like a fine choice. I've also tried notty and s-04. Linus had a house yeast that he describes as english and that is low ester at 62 or so. I may see if I can get some of their yeast for the next go... Don't know if they are willing, but...
This is an older thread, but here is what I worked out after touring the brewery and talking with Linus and company. I quite liked the result, and only have one bottle left. Resized to 5 gallon:
Dos Perros - All Grain - 5 gallon
Type: All Grain

Here's the Yazoo Pale Ale recipe as I know it, scaled to 5 gallon. I quite enjoyed it when I brewed it:
Yazoo Pale Ale - 5 gallon - all grain
Type: All Grain
Batch Size: 5.00 gal

Amount Item Type % or IBU
9.27 lb Pale Malt (2 Row) UK (3.0 SRM) Grain 87.58 %

Congrats... I'm nearly 60 in, but remember the feeling of that first bottle. You are required by law to open an early one on that first batch, me thinks, but if you give it a couple weeks, things will come together for you.
I like to recommend this video on time in the bottle...
