    "unintentional step mash"! i did the same thing last weekend. i ended up doing an unintentional decoction mash for the heck of it! maybe i'm too firm of a believer in the fact that it will probably be good anyway.

    and make sure you're correcting the temp for your hydrometer! but more than likely it's not boiled enough.

    +1 on the cooler MLT conversion. super simple once you ready through and break it down and it makes it a lot less stressful as you mash, because you don't need worry about the temp as much. and you can easily sell it later if you go with kettles or something.

    do the yeast washing that is in the FAQ and you should be able to separate it. just build up your yeast a little bit as you bring it to life.

    +1 on batch sparging. definitely works well in getting a high efficiency. and it take less time that fly sparging. and you are making the temperature adjustments for your hydrometer, right?
