    Sweet Potato Ale

I finally got my Sweet Potato beer bottled and out to the masses. It conditioned just in time for Thanksgiving and family and friends kept coming back for more, which was a nice surprise since I was winging it. For 2.5g recipe: 4.0oz Oats, Flaked 4.0oz Wheat, Flaked 8.0oz Munich (10L) 5.0lbs...

    Possible Orange IPA???

Citra is one most people go with to bring out that orange citrus flavor. Amarillo and Centennial are good citrusy hops. Saaz is something you'll easily find over there and will give you a floral/citrusy character.

Blew the lid off my bucket

shoving 6.3 gallons in a 6.5 gallon bucket isn't a good idea either. give yourself some headspace and you'll be golden. if you really are concerned with contamination... don't worry so much. you can scrape the cruddy looking foam off the top and you'll still have plenty enough yeast to get...

    Late hop addition recommendations

I just hate when people act like they know things when they're just BSin He uses tables to describe the instances used. There is 0-30%, 30-60%, 60-90%, or "nearly all"

    Late hop addition recommendations

Actuallllly, Daniels does say that sugar is used in 30-60% of English Pale Ale's, but he says that the Burton brewers use maltose syrup, which doesn't produce ciderlike flavor. The water characteristics also supposedly add to a lot of what makes these brews taste so damn good. This is all if...

Noticed a change in my thoughts on brewing

When you see that you are making good brews and can make subtle changes that greatly affect the taste, then you do put more time in it. It's like that with any hobby really... once you realize that are able to do it well and get quality products you start to spend more time it. When I started...

    Late hop addition recommendations

This is a perfect opportunity to pull out some Ray Daniels. Bass Ale actually uses Goldings and Fuggle. I know this doesn't help with what you have on hand, but is good to know if you're going for an authentic clone. Cascade is a great all around hop, so if you have that on hand I'd go with...

Please Cretique Citra Pale Ale Recipe

American Ale II does produce some citrus character, so if you have that on hand I'd go with that and save the Pac-Man for a bigger beer. Its really up to you with what you are looking for... that's the beauty of homebrewing. Do you want the fruit and citrus to jump out at you, or keep the hop...
