    Bry-97 not doing anything

I mistyped. I am fixing it now. You are exactly right. Any beer I can think of that asks for US-05 would work as well with BRY-97 with possible acception to an American wheat beer.

IPA Recipe Critique - Cascade and Sterling?

Granted, I live in Portland, Oregon, and my taste buds are used to west coast IPAs, but that recipe doesn't look like an IPA to me. IMO, it's not an IPA if it isn't dry-hopped and there aren't at LEAST .5 oz of flame-out hops per gallon of finished beer. That said, to answer your question...

    Bry-97 not doing anything

I can't think of a recipe that asks for US-05 which wouldn't also work with 2nd generation BRY-97. IME, both are very clean American-style yeast strains, with BRY-97 being far more flocculant and the second generation of either strain being a significant improvement over the first. I would...

    Serebrianka hops

I have a pound of this stuff in the freezer right now and was wondering what to do with it. I imagine it is "noble type" since Russians don't exactly brew IPA's, but I would love to know if this will have more of an "American" character.

Yeast for Special Bitter: S-04 vs. Wyeast 1275 Thames Valley

S-04 will be far more flocculant and a bit less dry. It also sometimes can provide a "bready" flavor that I enjoy in bitters. 1275 is rather dry and minerally and well-suited for an IPA, brown ale, porter, or stout; where you are looking for a drier yeast.

Can you Brew It recipe for Anderson Valley Boont Amber

They are said to be similar to Glacier, which I find similar to Willamette or any other neutral English-style hops. Even goldings wouldn't be a terrible sub, I am sure.

Dont Put Dark Munich in an IPA!

60 min, 90 min, 120 min - they all taste like candy juice to me. Then again, I am in California, so I really can't speak for the freshness of any DFH I've had.

Dont Put Dark Munich in an IPA!

You think IPA's shouldn't be malty rich/sweet and you cloned DFH? I find their IPA's cloyingly sweet.

    Unibroue Éphémère

A couple years back, I was inspired by Ephemere Apple. I brewed a beer/cider hybrid, and I called it Apple Pie Beer. I scaled back a Hoegaarden clone recipe to 3 gallons, spices and all, but with Northern Brewer as bittering agent and without any aromatic or flavoring hops. Also, I added a...
