If it was a kit it probably listed what the OG and FG should be.
If it wasn't a kit, post your ingredients and yeast used (or plug into a homebrew calculator) and you can probably calculate your OG.

My keezer is a chest freezer with an external temp control that keeps it at 45 for serving beer. Haven't tried fermenting in it but i'd imagine that would work too. Just set to a higher temperature.
For fermentation it prob depends more on your ambient temperature. You may want a heater...
+1 on the 10gal pot... my 8gal gets pretty full during a full boil and I have to watch it like a hawk and turn the gas on and off until it gets going.
I'd invest in a way to control fermentation temps ahead of a conical. Or do a DIY build for a ferm chamber if you do go with a conical...
I have the same one. Def +1 to the preheat... I also put a blanket on top of mine during the mash to try to help a little bit more.
