WWYD? 55 gallons ready to bottle/keg????

Apologies in advance for the loooong post and thanks for any opinions/advice. Alrighty then...long story short I have 55 gallons of cider fermenting in a conical fermenter in my basement. I squished those stupid apples myself and picked them all myself~washed them~rinsed them in star-san and...

    So...overcarbonated cider...now what?

Ah, I didn't even think of the freezer. I will try that tomorrow night and drink faster. I have a couple of friends that will help me. :)

    So...overcarbonated cider...now what?

montrachet yeast, and I backsweetened with 3 cans of apple concentrate and a half gallon of cherry juice. I let it sit for 2 weeks in the carboy, bottled with the intent of bottle pasturizing in 5 days-but life happened. When I open the bottle, I get a big fffftttt and a second or two before the...

    So...overcarbonated cider...now what?

I have joined the bottle bomb club. :) I didn't pay attention to how long my bottles were carbonating...(long story but justified inattention ;) ) Anyhoo, I box up my bottles just in case-and I came home to the beautiful smell of cherry cider exploded in my dining room. I only lost 3 bottles...

Cleaning out a closed bar, what treasures should I look for?

The place has been closed for about 5 years. I need to get back inside and look around, but right now in the negotiations it looks like the owners now want to handle the clean out of the restaraunt/bar themselves. That will actually save time, but I will keep my eyes peeled if they miss anything. :)

What does your cider taste like?

I'm a huge fan of 2 Towns Cider out of Corvallis Or. Not a huge fan of JK Scrumpy, but I might have had a bad bottle. I tried Original Sin, nice and dry-and I like Angry Orchard. I may be weird but I like the Ginger Apple flavor too. Foxbarrel has some great pear ciders I'd like to figure out...

Pasco...or should I say West Pasco? :) I'm a cider junkie though, haven't tried homebrewing beer yet.

Cleaning out a closed bar, what treasures should I look for?

It looks like I may get the chance to clean out a bar that closed. It looks like they just locked the doors and never came back one night as the kitchen sink is full of dishes. There isn't any power yet, so I am not sure what else is hiding under the bar or in the dark and scary kitchen. I did...

Frustrated with cider...lots of ??? long post sorry

Reading through the notes I scrawled I think the cider with the acetone aftertaste was fermented with some honey and I used carbonation drops in the bottles to prime with. I'm willing to bet it was wild honey, and I am thinking that the combo of the unknown honey content and the carb drops it...

    Carbing Cider

I can't consume artificial sweeteners, so I like a dry cider also. I have bottle carbed using 22 oz bottles and have had good, consistent results with 1 tsp white table sugar per bottle. I rack the bottles first and then use a funnel to drop the sugar in, cap and then rotate a little to make...

Frustrated with cider...lots of ??? long post sorry

I don't think it is the fermenting temps, although that is a valid idea... I relocated my brewing site from one end of the basement to the other because it seemed too cold. The "new" site I have been using about 6 months and I'll have to check records when I get home-but I think the one great...

Frustrated with cider...lots of ??? long post sorry

So I have been lurking for about 6 months, and have been brewing hard cider for about a year and a half. My results in the beginning were excellent, but all brews since June have had issues. It really seems like since I have been taking notes, writing things down and using a hydrometer things...
