    Hobnob, Apfelwein, & Skeeter Pee. All currently bubbling happily!! Brewing an amber ale tonight. Can't do much in the summer, so winter time is all out brewing!!

    Bear Tooth Stout that has been in the bottle for a year. Makes Guinness look pale!! Great chocolate smell. Also an Irish Red that's been in the bottle for a year as well.

    Risk of autolysis in a 3 week fermentation

    I had two different brews in their primaries for 14 months. Pulled them off after tasting to make sure flavor was good & bottled with yeast added to the bottling bucket along with priming sugar. Was not a problem.

    How much is too much: Hydrometer readings taking my beer away!

    I use a test bottle. When you first put the batch into the carboy, save a little out & put it in a bottle. I usually plug the bottle with a paper towel. If it gets infected it doesn't matter. The readings will still be acurate.
