    What do you mean by a "Firkin setup"? You can use firkins either connected to a beer engine or set up on the bar for gravity dispense (which is simpler). I use both methods but if you let us know how you want to use them and I'll try and help.

    It's probably worth pointing out that Boddingtons is brewed in Manchester which has soft water where as London has hard water. If you're trying to adjust your water to that used to brew Boddingtons you don't want to be aiming for a London profile. /Phil.

    I measure the heat of the recirculated wort as it leaves the exchanger. This is used as the input to the PID. It's not possible for the wort to go above the set temperature so long as the pump is running. /Phil.

    I make it very clear that my system uses a seperate heat exchanger. People need to be aware that there is a way of conducting step mashes with a HERMS it just needs to be designed with that in mind. Using the HLT as the heat exchanger restricts this ability. /Phil.
