    Joe's Ancient Orange Mead

    Any comments on my first cider?

    My favorite cider/apple wine is mulled flavor. Grocery stores, or your local cider mill, often carry "mulling spices." Sometimes in a cheesecloth sack, sometimes in a bag. I warm a little bit of cider on the stove, then add the bag, or even toss the spices in without the bag, to help the flavors...

    Yep, I would also ferment closer to 65, if possible. That being said, I had a batch ferment much warmer and it too fermented and finished in about a week and the end result was fine. I wouldn't do it again :) but it was ok. Gotta spend the $$ and get a hydrometer, for sure. Better make it...

    I agree. - Towel over primary for the first week - Drill small hole with gromet and airlock in plastic lid Enjoy!

    It doesn't sound bad. Let it sit for a month before you rack. Then you can rack to fulfill you urage to do something! :) I never carbonate my cider, so not sure on that part. I have zero patience, so not sure why I make my own brews, which require tons of patience... :)

    Sounds about right... I would, however, toss in some more yeast. Then, cover it with a towel, let it sit for a week. Then, add airlock. Then, stop worrying. :)

    If your cider is only a month, or so old, give it time. Like a year! :) I have tasted my ciders along the way and they change flavor as they age for sure. As long as it isn't turning into vinegar, I wouldn't be overly worried at this point. Just curious why you bottled so quick? I...
