Help with mash and sparge water volume

That does seem a bit high. I guess it may also depend on if they including all the trub when you dump it into the fermenter. I use .125 gallons per lb of grain soak up and I usually lose about a half a gallon during the boil. Which would yield less than 9 gal in this instance.

How do YOU name your beers?

Seeing as I named my brewery after my dog...Beagle Brewing Co, the names usually involve him...like Shaved Belly IPA because he recently had surgery and it was a mid percent alcohol IPA.

    Bottling battle

I was thinking the same thing. Probably one of the simpler solutions. Getting more elaborate you could build some kind of two rod backing, such that when you press the bottle against them and slide it up. The wand goes right in there.

how can it go so low?

Agreed, seems like one of the numbers is off, that high attenuation at that temp. Maybe the fg reading is off? Either that or you've discover a new super yeast.

How long to carb in bottles?

Can be as little as 1week but I find 2+ to be more the case. Have a choc stout that has taken closer to 4+ so the beer and conditions can affect it. I'll usually open one up a week to keep tabs on it. It's done when it's done- good enough for your tastes to start drinking.

    Banana beer

I did a wells clone a while back and had the same experience. Used wlp380 yeast on a another hefe beer and it screamed bananas. Wlp380 is what I am going to use for my next wells attempt. I would also toss some blended fresh sanitized bananas in the secondary as well.

second batch bottling questions about drink date

I have only bottled and this pretty much says it all.

What Hefeweizen yeast gives off a banana flavor

Second that. I've done this one hefe recipe a few times and it tastes like it's been racked on a whole bushel.

    Dry hopping

As others have said, can do leaf, but you'll want to bag or use a filter. I find that pellets compact enough at the bottom after 2 weeks that I can easily siphon off for bottling without leaving much behind. And whether you do secondary or not some of the pellet material may float, each time...

AHA Big Brew Wort Chilling (Unconventional ideas to Chill ?)

What I do in my kitchen which could be applied anywhere with an outlet is make an ice bath and use a pond pump to circulate water through the chiller and back again so I don't waste water. By the time the wort is down to 72, my now melted ice bath is also at 72. It works out that they happen...

when do you transfer out of primary?

After a week which for me is not long after fermentation is pretty much done. Then stays in secondary for 2. Although based on a lot of posts I have been reading, I will likely stop transferring unless I'm dry hopping or something.

Anyone choose not to use a pump?

Agree that with 5g batches, too easy to just use a saucepan to transfer my strike water. Couple of dips and I am done. Only use a pond pump for my chiller. And that is worth every penny!

How to add permanent volume markings to a kettle (illustrated)

I also used about 6-7 of them. Was able to do about 2-3 marks/numbers with each qtip. Got all nasty but just pulled the wire out, painters taped to a new qtip, wrapped the end around the cotton area, dipped and went back to work. Each mark/number only takes about 1 minute of wiping the qtip...

How to add permanent volume markings to a kettle (illustrated)

Mine isn't as pretty as some of you have, but it was very cool to get the marks on there. Super easy. I used an old wall wart and used painters tape to tape the negative end to the inside of the kettle near where I was working. Had some old number stickers sheets that I turned into stencils...

    Remote probe thermometer wort proofing

Used it during 4 other brews since and it's great. I can finally monitor how my wort chiller is doing while watching tv. Very liberating.
